當今的台灣,作為現代健康飲食理念的一部分,素食文化蔚然成風,素食友好餐廳林立及素食人口快速的成長,素食業已經是台灣飲食行業相當重要的組成部分,加上食品工業技術進步,發達的素食產業把台灣打造成素食者的天堂,使素食者在飲食上的需求,更加豐富與便利。
以Durkheim的角度來看,吃什麼食物,看似個人的飲食選擇,當這些飲食偏好變成了社會群體現象時,這種飲食偏好所形成的分類就會成為一種「社會事實」,可能會影響人際互動關係。所以,當一個人選擇吃素,不僅是個人的選擇,而是一種集體的飲食型態,素食為非主流飲食文化,飲食上需求往往可能遭到忽略與不重視,想了解不同原因吃素的人,是否需採取因應策略,才能維持自己的飲食型態。
針對此議題進行深入的瞭解並期待透過此份學術研究,了解不同原因吃素的素食者,於公私領域即是工作場所及家庭生活面向,素食者把吃素作為一種生活風格與飲食上的選擇,除了涉及身份的認同之外,是否需要透過一些因應的策略及作為,來加以維繫吃素的信念,最後探討近年來素食飲食方面有趨於友善的狀況,是否有提升素食在外飲食之便利性。

Today, in Taiwan, vegetarian culture has become more and more popular as part of the healthy eating lifestyle. There is a sharp increase in the number of vegan restaurants and the vegetarian population. In addition to the new technology of food product development, vegan food businesses have transformed Taiwan into a vegan paradise, providing more variety options and greater convenience.
According to Durkheim’s theory, what people choose to eat seems to be a personal decision-making process of food choices. However, when the food preferences become social phenomena, forms the collective thoughts can be defined as “social fact,” which affects the social relationship. Hence, when people turn to vegan, it is a personal choice and a collective diet habit. Veganism is a counterculture that is often regarded as a fringe movement. Therefore, whether the vegetarians commonly need to have corresponding solutions to maintain their diet is inquire.
This research aims to study this issue, which provides an understanding of the vegetarians. These people choose to be vegetarians for different reasons, how they cope with their diet whether in public or private, in the workplace or at home. Many people choose a vegetarian diet out of diet habits or meal options. This decision involves self-identity, which may need some complementary strategies and actions to support the beliefs of being a vegetarian. Lastly, point out that recently vegan diet is on the rise, whether it greater the convenience of expanding more vegan options into restaurants, fast-food places, and grocery stores.
