臺灣進補觀念的轉變

  • 「進補」是臺灣飲食文化中極具特色的一環,其由來是由於早期人們生活品
    質差,營養較為缺乏,為了補充食物來源不足所造成的營養不良,人們會在某些
    特定的時節進行進補,以補充平時所缺。然而隨著臺灣經濟的發展,現代臺灣人
    在營養的需求上從早期的營養不良轉變為營養過剩與營養不均衡。許多醫生與專
    家紛紛提倡輕食、少油、少負擔的飲食型態,這令進補陷入了尷尬的地位。只是
    我們仍可看到在特殊時序或是節日時,羊肉爐、薑母鴨等進補店依舊生意興隆、
    高朋滿座,本研究欲探討這其中的矛盾與觀念的轉變。
    本研究採用「訪談法」與「新聞分析法」進行交叉的分析,將田野的結果與
    大量資料做比較,研究結果將更具信度。本研究發現進補在臺灣仍然有舉足輕重
    的地位,唯受到了西醫的衝擊使得臺灣人對進補的醫療概念產生混亂,對於自身
    為何從事進補抱持了許多矛盾的態度。另一發現為進補在面對社會的輿論與撻
    伐,也逐漸朝著娛樂、休閒、多元等方向轉型。
  • “Tonic” is one of characteristic of food culture in Taiwan. It originated in bad
    quality of life and lack of nutrition, therefore people tonic in specific festival for nutrition. However, along with economic development in Taiwan, modern Taiwanese on nutritional requirements change from malnutrition to nutritional imbalance and overnutrition. Many doctors and experts say that we need to eat less oil, less salt and less affordable food. It makes tonic embarrass. However, we can still see that the tonic store like mutton hot pot or ginger duck shop with Chinese herb filled with visitors. We want to discuss the concept of change and confliction.
    We use interview and news analysis to cross analysis. To compare with the
    results of the fieldwork and large amounts of data, the result will be more reliable. We find tonic still has a pivotal position in Taiwan. Just by the impact of western medicine make confusing in Taiwanese medical concept of tonic and contradictory attitude. Another discovery is the tonic trend toward to entertainment, leisure and pluralism.
