自西元2000年以來,臺灣面臨的食品安全問題日益凸顯。每當一次食品安全危機發生,消費者對臺灣食品安全的信任度都會受到嚴重打擊。食品添加物的廣泛應用,進一步加劇了這一問題的嚴重性。從三聚氰胺毒奶粉、塑化劑、黑心油至美豬美牛等事件。臺灣的食品安全問題引起消費者高度關注,媒體如報紙、電視新聞、網路媒體大量報導相關議題,且電視節目分享健康知識。有機農業、無毒農業等興起,食品安全標章多樣,消費者願支付更高價格購買認證產品。政府採取政策、法規、機構等多方措施提高食品安全認知和監管,研究分析消費者行為、政策效果,旨在改善食品安全問題。研究關注政府措施對民眾食品安全認知的實際影響,以及影響民眾關注度的因素,如食品安全事件、媒體報導、教育活動等。深入研究可提出改進措施,促進食品安全意識和政策改善。
透過風險社會、風險認知、風險管理、市民社會、社會運動、食品安全的風險與運動了解民眾食品安全認知,並使用中央研究院社會學研究所在西元2014年進行的第二次社會意向調查進行量化分析。得知臺灣民眾對政府在食品安全信任感分數較低,對食品安全風險認知分數普遍較高;無論男性、女性,教育年數越高,對食品安全風險的認知越高;臺灣民眾對政府在食品安全信任感越低,食品安全風險的認知越高;臺灣民眾對透過網路媒體取得資訊及民主制度認同越高,則食品安全風險的認知越高,了解民眾食品安全認知。

Since 2000, Taiwan has been facing increasing food safety issues. Every time a food safety crisis occurs, consumers’ confidence in Taiwan's food safety is severely impacted. The widespread use of food additives further exacerbates the severity of this problem. From incidents such as melamine-contaminated milk powder, plasticizers, gutter oil to American pork and beef scandals, food safety issues in Taiwan have attracted high attention from consumers. Media outlets such as newspapers, television news, and online media have extensively reported on related issues, and television programs have shared health knowledge. Organic agriculture, non-toxic agriculture, and various food safety labels have emerged. Consumers are willing to pay higher prices for certified products. The government has implemented policies, regulations, and institutions to enhance food safety awareness and monitoring. Research analyses of consumer behavior and policy effects aim to improve food safety issues. This study emphasizes the actual impact of government measures on public food safety awareness and factors that influence public concerns, such as food safety incidents, media coverage, and educational events. In-depth research can propose improvement measures to promote food safety awareness and policy enhancement.

Through the understanding of risk society, risk perception, risk management, civil society, social movements, risks, and movements of food safety, this study emphasizes on the understanding of public food safety awareness. Quantitative analyses were conducted using the second social intention survey tested by the Institute of Sociology at the Academia Sinica in 2014. It was found that Taiwanese people have lower trust in the government regarding food safety and generally have higher scores in food safety risk perception. Regardless of gender, the higher the level of education, the higher the perception of food safety risks. Taiwanese people have lower IV confidence scores in the government regarding food safety, and their perception of food safety risks is higher. The higher the level of accessing information through online media and the higher the identification with the democratic system, the higher the perception of food safety risks. This study emphasizes on the understanding of public food safety awareness.
